Day 1

  • Variations and Uses of sponge and tuile.

Day 2
  • Learn to make mango mousse.
  • Introducing basil into mango mousse to create Mango Basil Cake.
  • Incorporating Day 1 techniques into creating a new plated dessert.
  • Assembling, decorating and plating a dessert.
  • Learn to apply techniques learnt to produce your own original dessert creations.

Day 3
  • Learn to apply techniques learnt in Day 1 and Day 2 to produce your own original dessert creations.
